Made with a carved mahogany top and the rest from hinoki cypress, imported from Japan, this box was commissioned by Junichi Matzuzaki (pictured), currently head chef at Sushi Noz: Chelsea. Specifically, this box is meant to store and transport sea urchin to the chef’s station for Omekase service. Hinoki is a beloved wood in Japan, prized for its strength, fine texture, aroma, and natural resitance to mold and rot.
